DIY Wedding Cake: Chocolate Mud Cake Recipe

When it comes to DIY wedding ideas, the one that often seems the most challenging is the wedding cake. Well, I’ve living proof that you don’t have to be a professional baker to pull it off!

For my own wedding, I knew I wanted something a little rustic, a little country – and definitely chocolatey. The first step is finding the perfect recipe, and I’ve been baking this particular chocolate mud cake for years! Today, I’m willing to share it with you and I know you’ll love it too.

Mel’s Chocolate Mud Cake (adapted from Family Circle’s Cooking: A Commonsense Guide)
Note: I made a triple batch and layered the three cakes into one awesome tower. This recipe is for one cake.

Ingredients:
1 1/2 cups self-raising flour
1/2 cup plain flour
1/2 cup cocoa powder
250g (9 oz) butter, chopped
1 tablespoon oil (not olive oil)
200g (7 oz) dark chocolate, chopped
1 1/2 cups caster sugar
1 tablespoon instant coffee powder
2 eggs, lightly beaten

Chocolate Fudge Frosting:
90g (3 oz) butter
1/3 cup water
1/2 cup caster sugar
1 1/2 cups icing sugar mix
1/3 cup cocoa powder

1. Preheat oven to 160 Celsius (315 Fahrenheit). Grease a 20 cm (8″) round springform cake tin and line with baking paper.
2. Sift flours and cocoa powder into a mixing bowl.
3. In a saucepan, combine butter, chocolate, oil, sugar and coffee powder with 1 cup of water. Stir over low heat until the chocolate has melted and become smooth. Let cool for about 10 minutes.
4. Add the chocolate mixture to the flours and whisk until just combined.
5. Add the eggs one at a time and mix well.
6. Pour into the prepared cake tin (one with straight sides like a springform tin) and bake for 1 1/2 hours or until the skewer comes out just clean. Let cool completely in the tin.
7. Once cool, cut the top so that it’s flat then turn onto a plate (the bottom is now the top!)

To make the frosting:
1. Combine butter, water and caster sugar in a small pan, stir over heat without boiling until the sugar is dissolved.
2. Sift the icing sugar and cocoa into a medium bowl. Stir in the hot butter mixture in batches.
3. Cover, refrigerate for one hour or until thickened then beat until spreadable.

Chocolate Mud Cake

To assemble, make sure you use only a small amount of frosting in between layers and coat your cake only when cooled. Use a hot knife to smooth the surface if that is what you want to achieve. I decorated my cake with native wattle and gum flowers made from icing, which I bought from a local cake supply store, and a cute bird’s nest that I made as well.

Intern at Intimate Weddings

Big Tree, Small Wedding

The tree. Is there a more perfect symbol for marriage?

A tree symbolizes strength, life, vitality, roots. And it happens to make the perfect backdrop for a small wedding.

An ancient, lone tree is so majestic and grand by itself, but adding simple touches like lanterns or swaths of fabric is another way to make it clear and differentiated as the ceremony backdrop.

Another great idea for during or after your ceremony is planting a tree. Planting a tree on your wedding day helps you to remember the beginning of your married lives together as you watch it grow each day. It’s a beautiful remembrance and could be an amazing tradition to continue with the birth of children as well.

I also love the idea (and this could be in conjunction with you planting your tree) of giving your guests saplings as wedding favors that they can bring home to plant and remember your marriage as they watch it mature over time. Unique Venues: Ice Castles in Silverthorne, Colorado

Lately, I’ve been on a bit of an ice tangent. Ice shot glasses. Ice candles. We even tried to make an ice rink. (Sadly, we are experiencing the mildest winter EVER here in the banana belt of Ontario, so the ice rink looks more like a pond.)

So, I’ve got this thing for ice. Which is why I nearly booked the next flight to Colorado when I stumbled on the Silverthorne Ice Castles. Have you ever seen anything more sublime? Isn’t that the BEST setting you have ever seen for an engagement photo?

And what’s really neat about this place is that it’s filled with icy corridors and pathways that you can explore.

The Ice Castles in Silverthorne are man-made ice formations created by Utah’s Brent Christensen.

Brett’s fascination with ice began with an ice rink that he made for his children. One thing led to another, and he ended up building an ice castle in his front yard that became quite the roadside attraction.

People began driving by the Christensen’s home just to see the unique ice structure in the front yard. The following winter, a local resort asked Brent if he would build a larger ice castle on the front lawn of the resort. Brent built the castle in 2009-10 and in two months the word had spread and about 10,000 people had come to see the “Ice Castle” at the Zermatt Resort. The following winter (2010-11) he built another castle in the Town Square in Midway, Utah (near  Park City, UT) and over 25,000 visitors came to see the ice castles in 2010.

His current creation is in Silverthorne, Colorado.

DIY Wedding Ideas: Torn Fabric Garland

I’ve been on a bit of vintage fabric buying bender the past year, and I’m always looking for DIY wedding ideas to put my stash to good use. I stumbled on a few of torn fabric garlands on Etsy and fell in love. They are easy to make – but time-consuming. If you are making uber-long ones to hang at a barn wedding, my advice is to gather your maids and get all hands on deck, er, rope and work on it together. It’s pretty mindless work (you can chit-chat while you are doing it), so it would actually be a fun project to share with your maids over margaritas. Instead of a ‘Stitch and Bitch’ you could call it a ‘Tie One On” party:)

You will need:

  • rope in desired thickness (I used 1cm thick rope)
  • fabric
  • scissors

Gather your vintage fabric and make cuts at the edge it about 2 inches apart. I like the rustic chic look, so my scraps are not all the same width or length. [Read more...]

Flower Girl Ideas

The role of the flower girl has been documented since Ancient Rome, but its thought that they’ve been part of weddings since day one.

Early on, flower girls would walk down the aisle carrying sheaves of wheat and tossing herbs to promote fertility. Through their evolution they also carried garlic, a bride’s cup and snips of rosemary. In the Victorian Era they began carrying baskets of flowers or wearing flowered crowns (which mirrored the shape of the wedding rings). Today flower girls are just as unique as the bride’s wedding day style.

Flower girl fashion can vary widely, but they are still typically dressed in tones similar to the brides or bridesmaids dresses. Often dresses and shoes are white or in pastel or pale palettes.

If your wedding style is vintage influenced and your looking for dresses that are reflective of that look, you can look in vintage shops as well as online (Etsy and Ebay are always great sources) for dresses that fit the look you’re going for. Remember, if you fall in love with an adult sized dress that is perfect you can also have it tailored to fit your flower girl.

Just like brides, flower girls can have fun with their accessories. Hair adornments and wreathes are sweet details that work for weddings with bohemian looks to formal affairs.

Here is a beautiful basket that is not only filled with flowers but has also been adorned with them to create an ethereal look and feel. Another vessel that could be used as a basket is this clever idea for using a vintage tea kettle.

Flower girls don’t have to just carry baskets anymore, this idea of using ribbon wands is a fun and Mid-Summer Night reminiscent look turning the flower girls into sweet fairies.

Another fairy, or ethereal look for your flower girl could be adding wings. I prefer the look of wings to be more natural, like an angel, as opposed to looking like it’s a Halloween costume. I absolutely love these flower girl wings that were made from pampas grass (these plants also come in pink, how adorable would that be?!) she really does look like a little angel.

One of my favorite flower girl basket alternatives is flower girls holding signs. I’m a big fan of text and I love the messages that these girls carry. This is great if you want to have more than one flower girl too.

While flower girl fashion and accessories can range from any style you choose, their symbolism remains the same since their invention. The flower girl (or girls) are supposed to represent who the bride was growing up and her journey from child to woman now as she becomes a wife.

DIY Ice Candles Tutorial

Fire + ice. Nothing brings the two together more beautifully than ice candles.

Ice candles add a magical element to a winter wedding. Line walkways, driveways or use them at the entrance of your venue. They are easy to make – and they cost next to NOTHING (assuming you have some tea lights kicking around the house.)

Ice Candles Tutorial

You will need:

  • plastic containers in two different sizes (I used 2L and 1.5 L ice cream and yogurt containers)
  • rocks
  • water
  • duct tape
  • tea lights

Add rocks to smaller plastic container for weight. Fill large container 2/3 full of cold water. Place smaller, rock-filled container into large container. Use duct tape to hold it in place. Make sure you don’t press the smaller container all the way to the bottom. You will want some room at the bottom, as this will be the base for your candle.

Place in freezer overnight. Remove from freezer.

diy ice candlesFill inside container with cold water. This should be enough to release it from the ice.

Run cold water on the outside of the larger container. Do not use hot water or the ice will crack! (I speak from experience.) That’s it!! Now, just add a tea light.
